The rest of my long weekend...

So I followed up a fun filled day on Saturday with making homemade sauce (yes I used fresh tomatoes, no cans here) and meatballs for my college bound stepson on a Saturday night (who does that?) and move in day on Sunday. I didn't take pictures because it wouldn't have been cool. Besides, I was trying to pretend I was one of the students! Ha! I got the easy job though, standing by the large pile of "stuff" while Bil, Mitch and Traci lugged it to his room. Score!

We had to take the Jeep and the car and still didn't get all his crap down there! I guess that was lucky for Mitch, Traci and Jack though because I was back in the kitchen on Monday night after a day on the golf course making them stuffed peppers. Don't ask about golf, I couldn't make a putt to save my life!

Who ever said Bil was the cook in this family!? Newsflash people, I was holding out on y'all! All my new friends at Eastern CT think I'm friggin Rachel Ray. I love that my mom has a garden and always has more than enough vegetables to go around. I also like the fact that Mitch thoroughly enjoys eggplant parm as much as I do so I don't eat the entire pan!!

So my sauce, meatballs, eggplant parm and stuffed peppers passed the test. Next up, probably some salsa then I'll have to hit Food Network.

My next profession......college caterer? Hummmm............
